So does the marriage record have any parental details on it?
does her English death record not hold some information about parents? [I've forgotten what details they have]

The marriage register is a one liner, very basic and the English death certificate just names the husband and the informant.

As a long shot I'm building a tree for the Alexander McDougall in the 1841 census in the hope of finding a DNA match.

No harm in making a separate tree for his family - bearing in mind to check out his brothers and male cousins too! - and having that as a side note, but any proof you have is circumstantial at best.
