hi sarah, on William Herbert's marriage certificate to Daisy Cooper, (she used her first married name on loads of her kids birth certificates) very confusing for me, lol.
he states his father is named William Dempster a gardner. it dosnt say he was deceased, would it have if he was,?? maybe this is where Ive gone wrong. I was in Manchester a few years ago and managed to visit the war museum and chatted to a kind man who suggested that William Herbert may have mistakenly stated that William Wallace as William Dempster as his father's name on the marriage certificate, does that make sense. then again, why would he put his fathers name as William when it was Herbert if I have the right family. (sorry if this sounds confusing).
I have his army discharge paper and is says he enlisted in Seaforth, this would put him in Liverpool at that time, but was discharged out in 1919 due to invalidity and somehow ended up in Isleworth, Middx.
according to my new cousins nothing was ever mentioned about him from our grandmother, they say it seems she forgot him. but they do seem to stick together regarding the Edinburgh Birth.

It certainly could be possible that when asked his father's name he said "William" and whoever was filling out the form assumed that William's last name was Dempster. Not sure whether the marriage record would have said "deceased" either. If William Wallace was not deceased then that may explain it also.
As for your cousins, I wouldn't believe anything until you see the proof with your own eyes! Several missing pieces of paper will not go very far towards putting together an accurate family tree... You absolutely need a birth record to prove where he was born and who his parents were. Unless you can find other evidence, such as the will of Herbert Dempster mentioning his son William Herbert, etc.

Was the father's occupation given on the birth certificate? If so, that might help decide. Also, on his army records, is his exact date of birth (day and month) given? Does it match the birth certificate? Often the year is wrong since they wanted to seem older, etc., but if the day and month are the same I would be close to convinced it was the same person!

His father was a gardener, no birth details, I only have a copy of the discharge paper, no details except when he was discharged, his regiment and number.

How can a birth certificate not have the date of birth on it? Or are you talking about a baptismal record? I assume this is the William Bertie Dempster in the index for the first quarter of 1899 and that you ordered it from GRO, rather than something that was handed down with family.

W.H was born 13th Dec 1898 he died 11.1.44 age 46.
On Herberts death certificate it says he was a Jobbing
On the 1901 census he was a dock labourer.
But his father and his father were Gamekeepers. Shame it dosnt state where.
